Pepper Parm Prime Rib

Step 1: Prepare the Roast

Remove the prime rib from the refrigerator 1 hour before cooking so it reaches room temperature.

Pat the roast dry with paper towels.

Step 2: Make the Pepper Parmesan Crust

In a bowl mix:

  • olive oil
  • minced garlic
  • cracked black pepper
  • salt
  • rosemary
  • thyme
  • grated Parmesan cheese
  • softened butter

Stir until it forms a thick paste.

Step 3: Season the Prime Rib

Rub the mixture generously over the entire roast, pressing it into the meat so it forms a flavorful crust.

Step 4: Prepare the Oven

Preheat the oven to 450°F (230°C).

Place the prime rib fat side up on a roasting rack in a roasting pan.

Step 5: Start with High Heat

Roast the meat at 450°F for 20 minutes to create a crust.

Then reduce the oven temperature to 325°F (165°C).

Continue roasting for about 15 minutes per pound.

Step 6: Check the Temperature

Use a meat thermometer for best results:

  • Rare: 120°F (49°C)
  • Medium Rare: 130°F (54°C) ⭐ best for prime rib
  • Medium: 140°F (60°C)

Step 7: Rest the Meat

Remove the roast from the oven and cover loosely with foil.

Let it rest for 20 minutes before slicing.
This keeps the juices inside the meat.
