Pecan Upside Down Cake

Ingredients:

For the Butterscotch Caramel Sauce:

310 ml sugar
60 ml, or 1/4 cup, of bourbon or Scotch whiskey
60 ml (1/4 cup) water
30 ml (2 tablespoons) light corn syrup
250 ml (1 cup) hot cream
60 ml (1/4 cup) salted butter
375 ml (1 1/2 cups) pecan halves

For the Cake:

500 ml (2 cups) all-purpose flour
180 ml (3/4 cup) finely chopped pecans
5 ml (1 teaspoon) baking soda
1 ml (1/4 teaspoon) salt
125 ml (1/2 cup) unsalted butter
60 ml (1/4 cup) canola oil
375 ml (1 1/2 cups) brown sugar
5 ml (1 teaspoon) vanilla extract
3 eggs
250 ml (1 cup) buttermilk

Instructions:

Preheat the oven to 180°C (350°F). Grease two 20-cm (8-inch) square baking tins with butter, leaving the parchment paper hanging over two edges. The dishes should be put on a cookie sheet.

For the butterscotch caramel sauce, in a saucepan, bring the sugar, Scotch, water, and corn syrup to a boil. Cook without stirring until the mixture turns golden in color.
Remove the saucepan from the heat and gradually add the hot cream and butter, stirring until the mixture is smooth. Once more, bring everything to a boil while stirring.
Divide the caramel into the prepared baking dishes and sprinkle half of the pecans on top.
To make the cake, put the flour, baking soda, chopped pecans, and salt in a basin.
.Set aside.
In another bowl, cream the butter with the oil, brown sugar, and vanilla using an electric blender. Add the eggs one at a time, beating until the mixture is smooth and well combined.
At low speed, add the dry ingredients alternately with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
Carefully divide the cake batter into the baking dishes over the caramel and pecans.
A toothpick put into the center of the cakes should come out clean after baking for about 50 minutes. Let the cakes cool for around half an hour.
Invert one cake onto a serving platter. Invert the second cake onto a baking sheet and slide it onto the first cake. Let the cakes cool completely.
Serve the pecan upside-down cake warm or cold, and if desired, top with whipped cream.
