Peanut Butter Cookies

Ingredients:
Peanut Butter Truffle Filling:

1 cup butterscotch chips
¼ cup creamy peanut butter

Cookies:

½ cup unsalted butter, softened
1 cup creamy peanut butter
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ cup granulated sugar (for rolling)

Directions:

Truffle Filling:

Put peanut butter and butterscotch chips in a bowl that is safe to microwave. After one minute in the microwave, stir until smooth.

Chill the mixture in the refrigerator until thick enough to scoop, about 10-15 minutes.
Before using, scoop into balls the size of a tablespoon and store in the refrigerator.

Cookie Dough:

In a mixing bowl, cream together the softened butter, peanut butter, and brown sugar until fluffy.
Beat in the egg and vanilla extract.
Add the salt, baking soda, and flour gradually until a cohesive dough forms.

Assemble Cookies:

Place granulated sugar in a small bowl.
Using about 2 teaspoons of cookie dough, scoop, flatten, and then delicately surround the truffle ball in the middle with the remaining dough.

Roll the filled dough ball in granulated sugar, then place it on a prepared baking sheet and slightly flatten.

Bake:

Preheat the oven to 350°F (175°C).
Bake the cookies for 9-10 minutes until they are puffed and the edges are set.
Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
