Orange Creamsicle Cake

Ingredients:

Cake:

1 box white cake mix
One cup orange juice (instead of the water the package calls for)

1/3 cup vegetable oil
3 large eggs
1 tablespoon orange zest

Creamsicle Frosting:

1 cup butter, softened
4 cups powdered sugar
2 tablespoons orange juice
2 teaspoons vanilla extract
1 tablespoon orange zest

Orange Cream Filling:

One box (3.4 oz) of quick vanilla pudding mix
1 cup cold milk
1 teaspoon orange zest
1/2 cup whipped topping
Directions:

Cake:

Preheat the oven to 350°F (175°C).
Butter and dust two 8-inch circular cake pans.

In a large bowl, combine the cake mix, orange juice, vegetable oil, eggs, and orange zest. Beat thoroughly blended at a medium speed.

Pour the batter into the prepared pans. A toothpick inserted in the center should come out clean after 28 to 30 minutes of baking.
Cool the cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Creamsicle Frosting:

Beat the softened butter until it becomes creamy in a bowl.
Add the vanilla essence, orange juice, and powdered sugar gradually. . Beat until smooth and fluffy.
Stir in the orange zest.

Orange Cream Filling:

In a small bowl, whisk together the instant vanilla pudding mix and cold milk until smooth.
Stir in the orange zest.
Fold in the whipped topping until well combined.
Assembly:

Arrange a single layer of cake onto a platter.

Spread the orange cream filling over the cake layer.
Top with the second cake layer.
Frost the top and sides of the cake with the creamsicle frosting.

Decorating:

Garnish with additional orange zest and, if desired, orange slices.
