No-Bake Fruit Cheesecake

Ingredients:

2 cups crushed graham crackers
1/2 cup melted butter
1 cup softened cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped heavy cream
2 cups mixed berries (strawberries, blueberries, raspberries)
1/4 cup granulated sugar
1 tablespoon lemon juice

Directions:

In a mixing bowl, combine the crushed graham crackers and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to produce the crust. Refrigerate the crust for a minimum of half an hour.

In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
Add the beaten heavy cream and fold gently.
Cover the cold crust with an even layer of the cream cheese mixture.
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat until the berries are soft and the sauce thickens slightly. Allow the berry mixture to cool.
Spoon the cooled berry mixture over the cream cheese layer in the springform pan.
Refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set.
