No-Bake Chocolate Oat Bars

Ingredients:

1 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 cup semisweet chocolate chips
1/2 cup peanut butter

Instructions:

Grease a 9×9 inch square pan.
Melt the butter in a large saucepan over a medium heat.. Stir in the brown sugar and vanilla extract until well combined.
Add the quick-cooking oats to the saucepan and mix until all the ingredients are blended together. Cook over low heat for 2 to 3 minutes.
Press half of the oat mixture into the bottom of the prepared pan, creating a crust. Set the remaining mixture aside for the topping.
In a small saucepan, melt the chocolate chips and peanut butter over low heat, stirring frequently until smooth.
Pour the melted chocolate mixture over the oat crust in the pan, spreading it evenly with a knife or the back of a spoon.
Crumble the remaining oat mixture over the chocolate layer, gently pressing it into the chocolate.
Cover the pan and refrigerate for 2 to 3 hours or overnight until firm.
Before cutting into bars, bring the bars to room temperature. Enjoy these delicious no-bake chocolate oat bars!
