Mini Meatloaf Muffins

Ingredients:

1 ½ lbs. Ground beef
½ cup Chopped onion
½ cup Chopped bell pepper
2 tsp. Worcestershire sauce
2 tbsp. Chopped fresh parsley
1 tsp. Dijon mustard
¼ cup BBQ sauce
⅔ cup Bread crumbs
1 tsp. Italian seasoning
1 tsp. Garlic powder
1 Large egg
Salt and pepper to taste

For the glaze:

¼ cup BBQ sauce
¼ cup Ketchup
1 tbsp. Honey

Instructions:

Preheat the oven to 350 degrees Fahrenheit.
In a mixing bowl, combine ground beef, onion, bell pepper, Worcestershire sauce, parsley, Dijon mustard, BBQ sauce, bread crumbs, Italian seasoning, garlic powder, egg, salt, and pepper. Knead the mixture until well combined.
Divide the mixture evenly into 10 sections of a well-greased muffin tin.
In a separate bowl, mix together BBQ sauce, ketchup, and honey to make the glaze. Top each mini meatloaf with the glaze.
Bake for 25 minutes or until the mini meatloaf muffins are browned and cooked through.
