Ingredients:
1 (12-ounce) package vanilla wafers
2 (8-ounce) packages cream cheese
3/4 cup white sugar
2 large eggs
1 teaspoon vanilla extract
1 (21-ounce) can cherry pie filling
Directions:
Preheat the oven to 350°F (175°C). Press paper liners into two 24-cup tiny muffin pans.
Crush the vanilla wafers. You can do this by placing them in a resealable plastic bag and crushing them with a rolling pin or using a food processor.
Press 1/2 teaspoon of crushed vanilla wafers into the bottom of each paper cup in the muffin tins.
In a mixing bowl, beat the cream cheese, sugar, eggs, and vanilla extract until the mixture is light and fluffy.
Fill each miniature muffin liner almost to the top with the cream cheese mixture.
Bake the mini cheesecakes in the preheated oven for 15 minutes or until the cheesecakes are set.
Allow the cheesecakes to cool. Once cooled, top each mini cheesecake with a teaspoonful of cherry pie filling.
