Mexican Chicken Pinwheels

Ingredients (Servings: 36 pieces):

2 boneless, skinless chicken breasts, finely shredded
¾ cup mayonnaise
2 green onions, thinly sliced
2 tablespoons dried minced onion
1 teaspoon garlic salt
3 tablespoons light brown sugar, packed
½ cup thinly sliced red seedless grapes
⅓ cup sliced almonds
Salt and pepper to taste
4 burrito-sized tortillas
Instructions:
Prepare the Chicken Salad:

Combine the mayonnaise and the shredded chicken in a large bowl and stir until completely blended.

Add the green onions, dried minced onion, garlic salt, light brown sugar, sliced grapes, and sliced almonds.

Until all of the components are equally distributed, stir the mixture.
As desired, add salt and pepper after tasting.
Assemble the Pinwheels:

Lay a burrito tortilla flat on your work surface.
Spread a quarter of the chicken salad mixture evenly over the tortilla, leaving a ½ inch border around the edges to prevent overflow.

Tightly roll the tortilla into a log.
Continue with the remaining tortillas and chicken salad mixture.
Chill the Rolls:

Wrap each rolled tortilla log tightly in plastic wrap.
Fold the ends of the plastic wrap under the logs to secure them.
Refrigerate the wrapped logs for at least 4 hours, or overnight if possible.
Serve the Pinwheels:

The cooled logs should have their plastic covering removed.
Cut each log into ½ inch slices.
Place the pinwheels on a dish for serving, then dig in.
