Ingredients:
2 cans (15 oz each) chickpeas, drained and rinsed
1 cucumber, diced
1 red bell pepper, diced
1/2 red onion, finely chopped
1/2 cup Kalamata olives, pitted and sliced
1/2 cup cherry tomatoes, halved
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/3 cup feta cheese, crumbled
Juice of 1 lemon
3 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Instructions:
In a large bowl, combine the chickpeas, cucumber, red bell pepper, red onion, olives, cherry tomatoes, parsley, and mint.
In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper to make the dressing.
After adding the dressing to the salad, gently toss to mix.
Over the salad, scatter the crumbled feta cheese.
Taste and adjust the seasoning if needed.
Allow the salad to sit for about 15-30 minutes before serving to let the flavors meld together.
