Ingredients:
300g pastry dulce de leche
150g cornstarch (corn starch)
70g butter
3 egg yolks
50g powdered sugar
1 tsp grated lemon peel
1 tbsp vanilla essence
1 tsp baking powder
Grated coconut (as needed)
Preparation:
In a bowl, place the softened butter and beat until it becomes creamy.
Add the powdered sugar to the butter and continue beating until well combined.
Add the vanilla essence and grated lemon peel to the mixture, and mix until incorporated.
One by one, add the egg yolks, beating well after each addition.
Mixing until a soft dough develops, gradually add the sifted cornstarch and baking powder to the mixture. As minimal handling of the dough as possible is desired.
The dough should be rolled into a ball, covered with plastic wrap, and chilled for half an hour..
Preheat the oven to approximately 200°C (390°F).
On a floured surface, roll out the chilled dough with a rolling pin until it is about ½ cm thick. Cut out discs of the desired size using a cookie cutter or the mouth of a glass. Keep in mind that the discs will expand while baking.
Place the discs on a buttered baking sheet, leaving some space between them to prevent sticking.
Bake the discs in the preheated oven for about 5 minutes, or until they turn slightly golden. Be careful not to overcook them.
Once baked, carefully remove the discs from the baking sheet using a spatula and let them cool completely before assembling.
Once the discs have cooled, spread a layer of pastry dulce de leche on one disc and sandwich it with another disc.
Optionally, roll the sides of the alfajores in grated coconut to coat them.
