Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup sour cream
1/2 cup caramel sauce (plus extra for topping)
1 cup apple pie filling
1 apple, chopped (for garnish)
Crumbled graham crackers (for garnish)
Directions:
Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Forming a crust, press the mixture firmly into the bottom of the prepared pan.
Beat 1 cup granulated sugar and cream cheese together in a large bowl until smooth and creamy. Beat well after each addition of egg. Add eggs one at a time. Stir add sour cream and vanilla extract until thoroughly blended.
Cover the pan’s crust with half of the cheesecake mixture. Spread apple pie filling on top, then cover with caramel sauce. Over the apple layer, pour the remaining cheesecake batter.
Bake for 50–60 minutes, or until the sides are gently browned and the center is set, in a preheated oven. After turning off the oven, let the cheesecake inside for an hour with the door slightly ajar.
After taking the cheesecake out of the oven, chill it in the refrigerator for four hours or overnight to solidify. Before serving, garnish with chopped apples, crumbled graham crackers, and drizzle with extra caramel sauce.
