One pound of skinless, boneless chicken breasts, divided into 1-inch pieces after being patted dry.
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried basil
– 2 tablespoons olive oil
– 2 tablespoons finely chopped fresh parsley
– 1/2 teaspoon kosher salt
– 1/4 teaspoon black pepper
– 4 tablespoons unsalted butter, divided
– 2 tablespoons minced garlic
– Juice of 1/2 medium lemon (about 2 tablespoons)
Preparation:
1. Season the Chicken:
– Combine the oregano, basil, parsley, salt, and pepper in a small basin.
– Evenly coat the chicken pieces on all sides with the spice mixture.
Drizzle with olive oil and toss to evenly coat.
2. Cook the Chicken:
– In a 12-inch skillet over medium heat, melt 2 tablespoons of butter. To coat the base, tilt the pan just a little.
– Add the chicken pieces to the pan in an even layer, ensuring they are not overcrowded.
Cook for 8 to 10 minutes, turning the chicken halfway through, or until it is largely cooked through and both sides are golden brown.
3. Add Garlic and Lemon
– Add the remaining 2 tablespoons of butter to the pan. Once melted, add the minced garlic and cook for another minute, or until fragrant.
– Ensure the chicken is cooked through to an internal temperature of 165°F.
4. Finish and Serve:
– Drizzle lemon juice over the chicken and stir to combine.
