Ingredients:
2 kg (4 pounds) of chopped, flattened, and drumette chicken wings
1 tablespoon aluminum-free baking powder (NOT baking soda)
1/2 teaspoon salt
2 teaspoons garlic powder
Pinch of cracked pepper
Buffalo Sauce:
1/4 cup unsalted butter, melted
1/2 cup Frank’s Original Red Hot Sauce
1-2 tablespoons honey, white sugar, or brown sugar (adjust to taste)
Blue Cheese Dip:
1/2 cup crumbled blue cheese, softened
1/3 cup sour cream
1/4 cup mayonnaise
2 cloves garlic, minced
1 tablespoon lemon juice
Pinch of salt
Pinch of cracked black pepper
To Serve:
Ranch dressing
Blue cheese dressing (recipe above) for serving
Celery sticks for serving
Instructions:
Adjust the oven rack to the upper-middle position and preheat the oven to 450°F (230°C). Line a rimmed baking sheet with aluminum foil and place a heat-proof wire rack inside.
Pat dry the chicken wings with paper towels to remove excess moisture. Transfer them to a large bowl.
In a small bowl, combine the baking powder, garlic powder, salt, and pepper, whisking well to combine. Sprinkle this mixture over the chicken wings and toss them until evenly coated.
Arrange the coated wings on the prepared wire rack, leaving about 1 inch of space between each wing.
Bake the wings for 30 minutes, then flip them and continue cooking for an additional 20-30 minutes until they are crisp and golden brown.
While the wings are cooking, whisk together the hot sauce, melted butter, and honey (or sugar). Toss the cooked wings in this sauce to evenly coat them.
Serve the wings immediately with blue cheese dressing or ranch dressing, along with celery sticks.

In a small bowl, combine the softened blue cheese, sour cream, mayonnaise, minced garlic, lemon juice, salt, and cracked black pepper. Mix well until smooth and creamy.
