Ingredients:
1/2 cup small pearl tapioca
4 cups milk (whole or 2%)
3/4 cup white sugar
3 eggs
3/4 cup white sugar (additional)
1 teaspoon vanilla extract
Instructions:
Rinse the tapioca pearls and then pour them into a small bowl. Cover the pearls with water and let them soak for 45-60 minutes.
In a large saucepan, add the milk and the first 3/4 cup of sugar. Bring the mixture to a simmer over medium heat.
Once small bubbles start to form, add the soaked tapioca pearls and reduce the heat to a gentle simmer. Stir frequently and cook for an additional 15-20 minutes, or until the pearls become translucent.
While the pearls are cooking, beat together the eggs and the remaining 3/4 cup of sugar in a medium-sized bowl.
Slowly pour a stream of the hot milk and tapioca mixture into the eggs, about 1/3 cup at a time, while stirring constantly. Continue this process until half of the hot mixture has been incorporated into the eggs.
Slowly pour the contents of the egg bowl back into the saucepan, stirring continuously.
Simmer for a further three to five minutes, or until the pudding begins to solidify.

After taking the pot off of the burner, add the vanilla essence and mix.
Transfer the tapioca pudding to serving dishes and chill in the refrigerator until ready to serve.
