Ingredients:
For the Strawberry Ice Cream:
2 cups fresh strawberries, hulled and chopped
1 can sweetened condensed milk
2 cups heavy cream
For the Banana Ice Cream:
2 ripe bananas, mashed
1 can sweetened condensed milk
2 cups heavy cream
For the Chocolate Coating:
2 cups of white chocolate, melted
2 tablespoons of coconut oil
Freeze-dried strawberry pieces (optional, for decoration)
Instructions:
Prepare the Strawberry Ice Cream:
Puree the strawberries in a blender until they are smooth.
In a large bowl, mix the strawberry puree with sweetened condensed milk.
Beat the heavy cream in a separate dish until firm peaks form. The whipped cream should be gently folded into the strawberry mixture.
Pour the mixture into a container and freeze until firm.
Prepare the Banana Ice cream:
In a bowl, mix mashed bananas with sweetened condensed milk.
Beat the heavy cream in a separate bowl until firm peaks form. Incorporate the whipped cream into the combination of bananas.
Pour the mixture into another container and freeze until firm.
Assemble the Ice Cream Bars:
Once both ice creams are set, remove them from the freezer.
Using a popsicle mold or a rectangular container lined with parchment paper, layer the strawberry and banana ice creams alternately.
Popsicle sticks should be inserted into the molds and frozen until firm.
Coat the Ice Cream Bars:
Just before serving, prepare the chocolate coating by melting white chocolate with coconut oil in a heatproof bowl over a pan of simmering water.
Remove the ice cream bars from the molds and dip them into the melted chocolate to coat.
Place the coated bars on a parchment-lined tray and sprinkle with freeze-dried strawberry pieces if desired.
Freeze the bars for a few minutes to set the chocolate coating.
Serve and Enjoy:
