Ingredients:
1 1/2 cups Italian-style dried breadcrumbs
1 1/3 cups freshly grated Parmesan cheese, divided
1 teaspoon salt
2 16-ounce packages mozzarella cheese sticks
4 large eggs, beaten to blend
1 1/2 cups vegetable oil
Instructions:
In a medium bowl, combine the breadcrumbs, 1 cup of grated Parmesan cheese, and salt.
Cut each mozzarella cheese stick in half.
Beat the eggs in a shallow bowl. Dip the cheese sticks into the beaten eggs to coat them completely, allowing any excess egg to drip back into the bowl.
Coat the cheese sticks in the breadcrumb mixture, patting to adhere and coat them completely. Repeat the process by dipping the cheese sticks in the egg and breadcrumb mixture again for a second coating.
Place the coated cheese sticks on a baking sheet, cover, and freeze them until frozen, about 2 hours.
In a large frying pan, heat the vegetable oil over medium heat.
Working in batches, fry the frozen cheese sticks in the hot oil until they turn golden brown, about 1 minute per side.
Transfer the fried cheese sticks to plates. The remaining grated Parmesan cheese should be sprinkled over them.
