INSTRUCTIONS
For Chocolate Cake:
Preheat oven to 350 F.
Prepare two 8-inch round cake pans by greasing them with butter and dusting them with flour. Set the pans aside for later use.
In a medium bowl, mix together all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
In the mixing bowl, beat butter and sugar on medium speed for two minutes until light and fluffy.Add the eggs one at a time to the mixture, beating well after each addition and scraping the sides of the bowl to ensure thorough mixing. Incorporate milk, black coffee, and oil, mixing until the batter is smooth.
Slowly incorporate the dry ingredients into the wet ingredients with the mixer set to low speed. This helps achieve a smooth and well-blended batter.
Evenly spoon the batter into the prepared pans and bake for 10-15 minutes or until a toothpick inserted in the center comes out clean.
For the frosting:
In another medium bowl, combine butter, powdered sugar, and vanilla, beating until light and fluffy.
Add heavy whipping cream and beat for about 5 minutes.
Incorporate the melted chocolate chips, beating on medium speed until the frosting is smooth.
Assemble the cake:
Place one layer on your cake stand, evenly covering the top with frosting.
Add the second layer and top it with frosting, spreading the frosting around the sides evenly.
Decorate as desired.
