Hearty Veggie Casserole

Step 1: Preheat the Oven

Preheat your oven to 180°C (350°F).

Lightly grease a baking dish with olive oil.

Step 2: Cook the Vegetables

Heat olive oil in a large skillet over medium heat.

Add:

  • Onion
  • Garlic

Cook for 2 minutes until fragrant.

Then add:

  • Broccoli
  • Carrots
  • Zucchini
  • Bell pepper

Cook for 5–7 minutes until slightly tender.

Step 3: Prepare the Casserole Mixture

Transfer the vegetables to a large bowl.

Add:

  • Cooked potatoes
  • Milk or cream
  • Half of the shredded cheese
  • Salt
  • Black pepper
  • Paprika
  • Oregano

Mix everything well.

Step 4: Assemble the Casserole

Pour the vegetable mixture into the prepared baking dish.

Sprinkle the remaining cheese over the top.

If using breadcrumbs and Parmesan, sprinkle them evenly for a crispy topping.

Step 5: Bake

Bake for 25–30 minutes until the casserole is bubbly and golden on top.

Step 6: Serve

Let the casserole rest for 5 minutes before serving.
