Hearty Vegetable Beef Soup

Step 1: Brown the Beef

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and cook for 5–6 minutes until browned on all sides.
  3. Remove the beef and set aside.

Step 2: Cook the Aromatics

  1. In the same pot add the chopped onion.
  2. Cook for 3–4 minutes until soft.

  1. Remove the bay leaf.
