Hawaiian Banana Bread Recipe

Ingredients:

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 very ripe banana, mashed
8 ounces crushed pineapple (do not drain)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup shredded coconut

Instructions:

Preheat the oven to 350 degrees Fahrenheit.

In a large bowl, cream together the softened butter and sugar using a mixer until light and fluffy.

Add the eggs, one at a time, beating well after each addition.

Stir in the mashed banana and crushed pineapple.

Sift the flour, baking soda, baking powder, and salt in a separate medium-sized basin.

Add the dry ingredients to the wet ones and stir until just combined.

Stir in the shredded coconut.

Grease a 9×5-inch loaf pan and pour the batter into it.

Bake in the preheated oven for about 60 minutes or until a toothpick inserted into the center comes out clean.

Once the bread is taken out of the oven, it should cool in the pan for a few minutes before being transferred to a wire rack to finish cooling.
