Grandmother’s Buttermilk Cornbread

Ingredients:

8 tablespoons unsalted butter
1/2 cup granulated sugar
1 cup yellow cornmeal
2 large eggs
1 cup buttermilk
1 teaspoon baking soda
1 cup all-purpose flour
Salt, to taste

Instructions:

Preheat the oven to 375 degrees
In a mixing bowl, combine all of the ingredients except for the butter. Beat until the batter is creamy and smooth.
Place the unsalted butter in an oven-safe skillet and melt it over medium heat on the stove.
Take the skillet off of the burner and add the batter when the butter has melted. Whisk the batter together with the melted butter until well combined.
Bake the cornbread in the preheated oven for 25-30 minutes, or until it is browned and cooked through.
Remove the skillet from the oven and let the cornbread cool slightly before serving.
