Ingredients:
For the batter:
2 eggs
125 g sugar
100 g butter
100 g flour
1 teaspoon baking powder
For the filling:
750 g Cox Orange apples
2 packs custard powder
0.5 liter apple juice
Additional apple juice for stewing the apples
For the topping:
3 eggs
1 cup sour cream
5 tablespoons sugar
Instructions:
Prepare the batter by combining the eggs, sugar, butter, flour, and baking powder. Mix until well combined.
Set the oven’s temperature to 180 degrees Celsius, or 350 degrees F.
Pour the batter into a springform pan and bake for approximately 20 minutes or until the batter is cooked and golden.
Core and peel the apples, then stew them in a little apple juice. Drain the stewed apples using a sieve.
In a saucepan, bring 1/2 liter of apple juice to a boil. Stir in the custard powder according to the instructions on the packaging, using apple juice instead of water. Fold the stewed apples into the pudding mixture and bring it to a boil again until the consistency becomes sticky.
Pour the apple and custard mixture onto the pre-baked dough, spreading it evenly. Bake the pie for an additional 5 minutes.
For the topping, separate the eggs. Beat the egg whites in a bowl until firm peaks form. Combine the sugar, sour cream, and egg yolks in a separate bowl. Gently fold in the beaten egg whites.
Spread the topping evenly over the pie and continue baking until the topping turns golden yellow.
Once the pie is done, let it cool briefly in the oven with the door slightly open. Remove it from the springform pan only when it has completely cooled down.
