German Potato Pancakes Recipe

Ingredients (serves 15):

6 gold potatoes, shredded
2 large eggs
2 tablespoons flour
¼ teaspoon pepper
½ teaspoon salt
½ cup onion, finely chopped
¼ teaspoon baking powder
¼ cup vegetable oil, for frying

Instructions:

Place the shredded potatoes, eggs, flour, pepper, salt, onion, and baking powder into a bowl. Knead the mixture well with your hands until all the ingredients are fully combined.
On the stove, heat the vegetable oil in a pan over medium-high heat.
Take small ¼ cup portions of the potato mixture and shape them into pancakes in your hands.
Carefully place the potato pancakes into the heated oil in the skillet. Cook until golden brown and crispy, a couple minutes on each side. If necessary, reduce the heat to avoid burning.

Once the potato pancakes are cooked, transfer them to a plate lined with paper towels to drain excess oil.
Proceed with the leftover potato mixture, adjusting the skillet’s oil level as necessary.
Serve the German potato pancakes hot as a delicious side dish or snack. They can be enjoyed on their own or with toppings like applesauce, sour cream, or even smoked salmon.
These German potato pancakes, also known as Kartoffelpuffer or Reibekuchen, are a classic and flavorful dish. The combination of shredded potatoes, eggs, onions, and seasonings creates a crispy exterior with a soft and tender interior. They make a great addition to breakfast or brunch, and they are also loved as a savory snack or side dish. Enjoy the delicious taste and texture of these homemade potato pancakes!
