GARLIC PARMESAN ROASTED POTATOES

 

ingredients:

3 pounds red potatoes, halved
2 tablespoons olive oil
5 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/3 cup grated Parmesan cheese
To taste, add freshly ground black pepper and kosher salt.
2 teaspoons unsalted butter
2 teaspoons chopped parsley leaves

Instructions:

Preheat the oven to 400 degrees . Prepare a baking sheet by spraying it with non-stick spray or greasing the bottom with a thin layer of oil.
In a bowl, add the halved potatoes.
Add olive oil, minced garlic, dried thyme, dried oregano, dried basil, and grated Parmesan cheese to the bowl.
Season with salt and freshly ground black pepper according to your taste.
Mix all the ingredients together, ensuring that the potatoes are evenly coated.
Place the seasoned potatoes in an even layer on the prepared baking sheet, with the peel side facing up.
Bake in the oven for about 25-30 minutes, flipping the potatoes halfway through to ensure even browning.
Meanwhile, melt the butter either on the stove or in the microwave for about 1 minute.
Once the potatoes are cooked and slightly crunchy, remove them from the oven.
Drizzle the melted butter over the potatoes and sprinkle with chopped parsley leaves.
Serve the roasted potatoes as a delicious side dish.
