Ingredients:
5 lbs NY strip steak
1 tbsp olive oil
1 lb baby golden potatoes, quartered or halved
2 tbsp unsalted butter
1 tsp oregano
1 tsp thyme
1 tsp rosemary
3 cloves garlic, minced
Salt and pepper, to taste
Instructions:
Place the olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
Add the potatoes, oregano, thyme, rosemary, minced garlic, and season with salt and pepper to taste. Cook the potatoes, stirring often, for about 3-5 minutes until they become fork-tender. Set the potatoes aside.
In the same skillet, add the remaining 2 tablespoons of butter and sliced NY strip steaks. Cook the steaks, stirring only a few times, until they reach your desired level of doneness.
Put the cooked potatoes back into the skillet to reheat and combine with the steak. Season with additional salt and pepper to taste.
Serve the heated potatoes and meat with garlic butter in a pan.
