Ingredients:
1.5 pounds (approximately three) round, thin-skinned white potatoes
1 large sweet onion
Salt
1 tablespoon vegetable oil
1 pat of butter
Directions:
A hefty 10-inch skillet should be heated to medium heat.
Cut the onions and potatoes into very thin pieces. Add salt to the potatoes and onions for seasoning.
Butter and vegetable oil should be added to the skillet.
Place a dinner plate on top of the potatoes and onions and weigh it down with something heavy, such as a bag of flour or canned food. Leave the plate on for 2 to 3 minutes, then flip the potatoes and onions, replace the weights, and let them cook for another 2 to 3 minutes.
Continue sautéing the potatoes and onions for a total of 20 minutes, or until they are golden and lightly browned.
