French Onion Soup

Ingredients:

2 cups thinly sliced yellow sweet onions
2 tablespoons butter
1 can (15-ounce) chicken broth
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 chicken bouillon cubes
1/4 cup compressed Velveeta cheese (cubed or shredded)
1 1/2 to 1 3/4 cups thick white sauce (see recipe below)
Shredded cheddar cheese for garnish

White Sauce Ingredients:

3 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1 1/2 cups whole milk

Instructions:

For the White Sauce:

Melt the butter in a 1-quart saucepan over medium heat.

Add the flour and cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
Gradually pour in the milk, a little at a time, while stirring constantly.
Add the salt and continue stirring until the mixture thickens to a pudding-like consistency.
Take off the heat and save until you’re ready to use it in the soup.

For the Soup:

In a 2-quart saucepan, melt 3 tablespoons of butter over low to medium heat.
Add the sliced onions and cook, stirring frequently, until they become soft and clear, but not browned.
Stir in the chicken broth, chicken bouillon cubes, salt, and black pepper. Heat until completely warmed through.
Add the white sauce and Velveeta cheese to the pan.
Since the white sauce has been taken off the heat, it will be thick.

Simmer the soup on medium-low heat, stirring constantly, until the cheese is melted and all the ingredients are well blended.
Reduce the heat to warm and let the soup cook for an additional 30 to 45 minutes, allowing the flavors to meld together.
Serve the French Onion Soup with a garnish of shredded cheddar cheese and a couple of slices of warm dark Russian bread.
