Ingredients:
2 large potatoes (500g)
Parsley
Spring onions
Salt, pepper, garlic powder
2 medium eggs
2 tablespoons corn starch (40g)
Sweet paprika
Coriander (7g)
Vegetable oil (for frying)
For the Sauce:
120g natural yogurt
Juice of half a lemon
Lemon zest
Parsley
Half a cucumber
Salt and pepper
1 clove of garlic
Spicy sauce
Olive oil
Instructions:
Grate the potatoes first, then squeeze off any extra liquid.
In a bowl, combine the grated potatoes, parsley, spring onions, salt, pepper, garlic powder, eggs, corn starch, paprika, and coriander. Mix well.
In a pan, heat the vegetable oil for frying.
Take spoonfuls of the potato mixture and shape them into pancakes. Place the pancakes in the hot oil and cook them until they turn golden brown on both sides.
Once cooked, remove the fritters from the pan and place them on a paper towel to absorb any excess oil.
In a separate bowl, prepare the sauce by mixing together the yogurt, lemon juice, lemon zest, parsley, cucumber, salt, pepper, minced garlic, spicy sauce, and a drizzle of olive oil.
Tailor the seasoning to your personal preference.
Serve the potato fritters with the prepared sauce on the side.
