Easy Burrito Casserole Recipe

Ingredients:

1 1/2 pounds ground beef
1 packet taco seasoning mix
1 can mild enchilada sauce
1 can refried beans
1 can corn, drained
8 large flour tortillas, cut in half
2 cups taco blend cheese
1 small can of green chilies
Green onions, for garnish

Instructions:

Preheat the oven to 350 degrees Fahrenheit

In a large skillet, cook the ground beef over medium-high heat until it is completely browned.

Add the taco seasoning mix to the cooked ground beef, stir to combine, and sauté for an additional 2-3 minutes.

Stir in the corn, enchilada sauce, refried beans, and green chilies until well blended. Simmer the mixture for 5 minutes.

Grease a 9×13-inch baking dish and create a layer using 4 of the flour tortillas that have been cut in half.

After spreading half of the meat mixture and half of the shredded cheese over the tortillas, repeat.

 

Add another layer using the remaining tortillas, then top them with the remaining half of the meat mixture and the remaining cheese.

Bake the casserole in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

If desired, garnish with finely sliced green onions.
