Bake four skinless, boneless chicken breasts until done.
8 ounces cream cheese, at room temperature
1 packet of taco seasoning
1 cup grated Fiesta cheese
8 to 10 corn tortillas
Optional extras: lettuce, onion, chopped tomatoes, salsa, sour cream, guacamole
Directions:
Preheat the oven to 350°F (175°C). Heat 1 tablespoon of oil in a frying pan and set it aside.
Once the chicken breasts are fully cooked, shred them using two forks.
Combine the taco seasoning and cream cheese in a bowl and stir until thoroughly mixed.
Add the shredded chicken to the cream cheese mixture and stir well to coat the chicken thoroughly.
Heat the corn tortillas in a hot oiled skillet for a few seconds on each side to warm them up. Set the tortillas aside and repeat with the remaining tortillas.
Spray a baking sheet with non-stick spray.
Spoon a portion of the chicken mixture onto the center of each tortilla and roll it up tightly.
Place the rolled tortillas in a single layer on the baking sheet.
Oven bake for 20 to 30 minutes at a preset temperature.
Remove the baking sheet from the oven and sprinkle the grated Fiesta cheese over the rolled tortillas. Return the baking sheet to the oven for another 5 minutes, or until the cheese is melted and bubbly.
Remove the tortillas from the oven and arrange them on a serving plate in a circular shape, leaving the center open.
Place a layer of shredded lettuce in the center of the circle and add optional toppings such as diced tomatoes, salsa, sour cream, or guacamole.
