Ingredients:
2 cups flour
2 cups cranberries (fresh or frozen)
1 1/2 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
18 oz. package cream cheese, room temperature
4 eggs, room temperature
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons baking soda
1/2 teaspoon salt
Instructions:
Preheat Oven: Preheat your oven to 350ºF (175ºC). Grease a 9 x 5-inch loaf pan with butter or nonstick spray.
Mix Wet Ingredients: In a large bowl, use a mixer to combine the butter, cream cheese, and sugar until creamy. Add the vanilla essence after beating in the eggs one at a time.
Mix Dry Ingredients: Whisk the flour, baking soda, and salt in a another basin. Mix the dry ingredients into the wet mixture gradually until they are well blended.
Add Cranberries: Gently fold in the cranberries.
Bake: Fill the loaf pan with the batter. A toothpick inserted in the center should come out clean after 60 to 70 minutes of baking.
Cool and Serve: After the loaf has cooled in the pan for approximately fifteen minutes, move it to a wire rack to finish cooling.
