Classic Potato Pancakes

Ingredients:

2 ½ pounds Russet potatoes or any starchy potato, peeled and finely grated
1 yellow onion, finely grated
2 large eggs
1 teaspoon salt
¼ cup all-purpose flour
Oil for frying

Instructions:

After grating the potatoes, use a towel to thoroughly wring out all the liquid from them.
Place the drained potatoes into a large bowl and add the grated onion, salt, eggs, and flour.
Mix the ingredients thoroughly using your hands until the mixture becomes somewhat tacky. A little extra flour can be used if it’s too sticky.
Heat 3 tablespoons of oil in a skillet over medium-high heat.
Take 1/3 to 1/2 cup of the potato mixture and place it into the hot skillet, shaping it into a pancake.
Fry the pancake for about 3 to 5 minutes on each side, or until they turn golden brown.
Briefly drain the cooked pancakes on paper towels to remove any excess oil.
Serve the potato pancakes immediately while they are hot. They can be enjoyed with applesauce and a sprinkle of powdered sugar, sour cream, or yogurt. They can also be served as a side dish with meat and gravy.
