1 whole beef brisket, about 5-6 pounds
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon brown sugar
1 cup beef broth or water
1 large onion, sliced
4 cloves garlic, minced

Instructions:

Preheat the oven to 300°F (150°C).
In a small bowl, mix together salt, pepper, garlic powder, onion powder, paprika, thyme, oregano, and brown sugar to create a dry rub.
Rub the brisket all over with the olive oil, then coat it evenly with the dry rub mixture.
In a large roasting pan, add the sliced onion and minced garlic. Place the seasoned brisket on top.
Cover the brisket with water or beef broth.. Cover the roasting pan with foil.
Place the pan in the preheated oven and cook for about 4-5 hours, or until the brisket is tender and easily pulls apart with a fork.
Once cooked, remove the brisket from the oven and let it rest for about 15-20 minutes before slicing across the grain.
Serve the sliced brisket with the cooking juices and onions as a flavorful sauce.
