Chili Parlor Chili

Ingredients:

1 tablespoon olive oil
1 lb ground beef (90/10 or 80/20)
2 cups beef or chicken broth
1/2 cup tomato sauce or puree
1 tablespoon chili powder
1 tablespoon unsweetened cocoa powder
2 teaspoons Worcestershire sauce
2 teaspoons chili flakes
2 teaspoons paprika
2 teaspoons soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
To taste, add freshly ground black pepper and kosher salt.

Instructions:

In a big saucepan, warm the olive oil over medium heat. Using a spoon or spatula, add the ground beef and break it up.
. Cook for 3 to 5 minutes until most of the pink color is gone.
Add in the broth, tomato sauce, chili powder, cocoa powder, Worcestershire sauce, chili flakes, paprika, soy sauce, onion powder, garlic powder, and cayenne pepper.
After bringing the mixture to a simmer, lower the temperature. Cover the pot and cook for 35 to 40 minutes, stirring frequently to prevent sticking.
Season with salt and pepper to taste.
