Chile Relleno Casserole

Ingredients:

14 ounces of whole, canned green chilies (two, 7-ounce cans)

3/4 pound jack cheese, grated
1 cup cheddar cheese, grated
2 eggs
1/2 cup all-purpose flour
1 1/2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper

Instructions:

Preparation:

Preheat the oven to 350 degrees F. Grease a 9 × 9-inch baking pan with nonstick cooking spray.

Slice the whole canned green chiles open, remove any seeds, and drain. Arrange half of the chiles in the bottom of the baking dish.
Sprinkle half of the grated jack and cheddar cheeses over the chiles. Layer the remaining green chiles on top of the cheese, then top with the rest of the jack and cheddar cheeses.
Creating the Casserole:
In a small bowl, whisk together the eggs, flour, milk, salt, and black pepper until fully blended.
Pour this mixture over the casserole, ensuring it is distributed evenly.
Baking:
Bake the casserole for 30 to 35 minutes, or until the top is golden brown, in a preheated oven, covered.
Remove the dish from the oven and place it on a wire rack to cool and firm up for a few minutes.
Slice the casserole into 6 equal-sized pieces using a sharp knife, serve using a spatula, and enjoy!
