Ingredients:
For the Chicken:
One pound of skinless, boneless chicken breasts, thinly sliced
Salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
Juice of 1 lemon
1/4 cup white wine (optional)
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
For the Garlic Parmesan Rice:
1 cup long-grain white rice
2 cups chicken broth
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
Chopped fresh parsley, for garnish
Directions:
For the Chicken:
Season the chicken strips with salt and pepper.
In a large pan, warm the olive oil over medium-high heat.
When the chicken strips are well fried and golden brown, add them to the skillet and cook for 3–4 minutes on each side.
Remove the chicken from the skillet and place it aside.
Add the minced garlic to the same pan and sauté for one minute, or until fragrant.
After adding the lemon juice, white wine (if using), and chicken stock, scrape out any browned pieces from the skillet’s bottom.
Simmer for 3-4 minutes to reduce the liquid slightly.
Stir in butter until melted and well combined.
After cooking, add the chicken back to the skillet and toss it to coat it with sauce.
Sprinkle chopped parsley over the chicken just before serving.
For the Garlic Parmesan Rice:
Rice, chicken broth, and minced garlic should all be combined in a medium pot.
Increase the heat to a boil and then lower the temperature to a simmer.
Once the liquid has been absorbed and the rice is soft, cook it covered for 15 to 20 minutes.
Take off the stove and mix in the grated Parmesan cheese.
Season with salt and pepper to taste.
To Serve:
Spoon the garlic parmesan rice onto bowls or plates.
Spoon some of the sauce over the rice and chicken, then top with the chicken scampi.
Garnish with chopped fresh parsley.
