Ingredients:
3 pounds boneless, skinless chicken breasts
1 can (10.5 ounces) condensed cream of celery soup
1 can (10.5 ounces) condensed cream of chicken soup
10 ½ fluid ounces milk
One box (6 ounces) of spiced cornbread stuffing mix
1 ½ cups chicken broth
Optional: 1/2 cup diced onion, 2 celery stalks chopped
Instructions:
Put the skinless, boneless chicken breasts in a big pot of water that has been mildly seasoned.
. Bring the water to a boil and cook the chicken until it is thoroughly done, approximately 30 minutes. Set the cooked chicken aside and reserve the cooking broth.
Cut the cooked chicken into bite-sized pieces and spread them evenly in a 9×13-inch baking dish.
Preheat the oven to 350 degrees FIn a medium-sized bowl, combine the condensed cream of chicken soup and condensed cream of celery soup.
Use one of the empty soup cans to measure out 10 ½ fluid ounces of milk. Mix the milk with the condensed soups until well blended. Evenly cover the chicken in the baking dish with this mixture.
In a separate small bowl, mix the seasoned cornbread stuffing mix with the chicken broth until the stuffing is moistened.
If desired, add the diced onion and chopped celery to the stuffing and broth mixture. Mix all the ingredients thoroughly.
Spoon the stuffing mixture evenly over the chicken and soup mixture in the baking dish.
Place the baking dish in the preheated oven and bake for approximately 45 minutes, or until the casserole is heated throughout and the top has turned golden brown.
Once baked, remove the casserole from the oven and allow it to cool slightly before serving.
