Chicken and Broccoli Teriyaki

Ingredients:

2 chicken breasts, cut into bite-size pieces
2 cups broccoli florets
1 tablespoon olive oil

For the Teriyaki Sauce:

1/4 cup soy sauce
1/4 cup water
2 tablespoons brown sugar
1 garlic clove, minced
1 teaspoon ginger, grated
Two tablespoons of water and one tablespoon of cornstarch dissolved

Directions:

Heat the olive oil in a big pan over medium-high heat . When the chicken pieces are browned on both sides, add them and continue to cook.
Add the broccoli florets to the pan and cook for an additional 3-4 minutes, until they start to soften.
In a small pot over medium heat, combine soy sauce, water, brown sugar, minced garlic, and grated ginger for the teriyaki sauce. Stir until the sugar dissolves.
Add the cornstarch mixture (cornstarch dissolved in water) to the sauce, stirring continuously until the sauce thickens.
Pour the teriyaki sauce over the chicken and broccoli in the pan. Stir well to coat the ingredients evenly with the sauce.
After cooking for a further two to three minutes, turn off the heat.
