Chi-Chi’s Baked Chicken Chimichangas

 

Ingredients :

2 cups cooked shredded chicken
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1/2 cup salsa
1/4 cup diced green chilies
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
Salt and pepper, to taste
6 large flour tortillas
Cooking spray
Sour cream, guacamole, and salsa (for serving)

 Instructions:

Preheat the Oven:

Start by preheating your oven to 400°F (200°C). LTo make cleaning easier and to minimize sticking, line a baking sheet with parchment paper.

Prepare the Filling:

Shredded chicken, salsa, chopped green chilies, Monterey Jack and cheddar cheeses, ground cumin, chili powder, garlic powder, cayenne pepper (if used), salt, and pepper should all be combined in a big mixing basin. To ensure that all of the flavors are evenly distributed, carefully mix everything.
Fill the middle of each wheat tortilla with a heaping tablespoon of the chicken mixture. To create a safe package, fold the edges over the filling and wrap them up firmly.

Ready for Baking:

Place the chimichangas on the baking sheet that has been prepared, seam side down.
Use a small amount of cooking spray on the tops to help them get a crispy, golden finish.

Bake to Perfection:

Bake the chimichangas in the preheated oven for 20-25 minutes, or until they are golden brown and crispy. Keep a close eye on them at the end to prevent overbrowning.

Serve and Enjoy:
