Step 1: Prepare the Chicken
Using a sharp knife, carefully cut a pocket into the side of each chicken breast.
Season both sides with:
- Salt
- Black pepper
- Paprika
Set aside.
Step 2: Cook the Mushroom Filling
Heat butter in a skillet over medium heat.
Add:
- Chopped mushrooms
- Garlic
- Salt and pepper
- Italian seasoning
Cook for 5–6 minutes until the mushrooms release their moisture and become soft.
Remove from heat and mix in:
- Mozzarella cheese
- Cream cheese (optional)
Step 3: Stuff the Chicken
Fill each chicken breast pocket with the mushroom cheese mixture.
Secure the opening with toothpicks if needed.
Step 4: Sear the Chicken
Heat olive oil in a skillet over medium heat.
Place the stuffed chicken breasts in the pan and cook for 4–5 minutes per side until golden brown.
Step 5: Finish Cooking
Reduce the heat to low, cover the skillet, and cook for 10–12 minutes until the chicken is fully cooked.
Alternatively, transfer the chicken to a 180°C (350°F) oven and bake for about 15 minutes.
Step 6: Add Garlic Butter
Melt butter in a small pan and sauté the garlic for about 30 seconds.
Drizzle the garlic butter over the cooked chicken and sprinkle with fresh parsley.
