Ingredients:
2 cups all-purpose flour
1 cup powdered sugar
1 cup unsalted butter, softened
1 package (8 oz) cream cheese, softened
1/2 cup granulated sugar
1/2 cup fresh lemon juice
2 large eggs
1 tbsp lemon zest
1/4 cup all-purpose flour
Directions:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a bowl, combine 2 cups of all-purpose flour and powdered sugar. Mix the ingredients until it resembles coarse crumbs by cutting in the softened butter.
Fill the baking dish with the mixture, pressing it firmly in.
Bake the crust for 15-20 minutes, or until it turns lightly golden. After taking it out of the oven, set it aside.
Beat the softened cream cheese and granulated sugar together in a large bowl until smooth.
Add the fresh lemon juice, eggs, and lemon zest to the cream cheese mixture. Beat until well combined.
Over the cooked crust, pour the cream cheese mixture.
Sift 1/4 cup of all-purpose flour over the top of the cream cheese mixture.
Bake for a further twenty to twenty-five minutes, or until the middle is set. Before slicing the bars into squares, let them cool fully.
