Ingredients:
For the Filling:
½ cup unsalted butter, at room temperature
1 ½ cups powdered sugar
6 oz cream cheese, at room temperature
1 teaspoon vanilla extract
1 ¼ cups whipped cream (or ½ cup + 2 Tbsp. chilled heavy cream mixed with 2.5 Tbsp. powdered sugar until stiff peaks form)
Assorted fresh fruits: blueberries, strawberries, peaches, kiwis, raspberries
Two 1-oz cartons of sugar-free instant vanilla pudding
For the Roll-Ups:
4–5 large tortillas
2–3 tablespoons melted unsalted butter
½ cup sugar
1 teaspoon cinnamon
Directions:
In a mixing bowl, blend butter, powdered sugar, cream cheese, and vanilla extract until smooth.
Gently fold in whipped cream, fruits, and sugar-free vanilla instant pudding until well combined.
Spread the filling mixture evenly over a tortilla.
Roll up the tortilla tightly and place it seam-side down on a plate.
Repeat with the remaining tortillas and filling.
Brush the rolled-up tortillas with melted butter and sprinkle with cinnamon sugar.
Chill in the refrigerator for at least 1 hour, then slice into pinwheels before serving.
