CARROT CAKE

INGREDIENTS ▪

Wet:
– 2 grated carrots
– 2 eggs
– 1/2 cup of brown sugar
– 100 ml of olive oil
– 1 pinch of vanilla extract
▪️ Dry:
– 1 cup of almond flour or oatmeal
– 1 teaspoon baking powder
– 1 teaspoon of baking soda
– 1/2 cup of nuts
▪️ Coverage:
100 gr white chocolate
50 gr of walnuts and almonds

PROCEDURE

1. Place the eggs, carrot and sugar in the blender, when the mixture becomes frothy, add the oil and vanilla extract.
2. Pour into a bowl and gradually add the dried ones (I sifted through a sieve and gradually incorporated with a spatula).
3. At the end add the walnuts and your optional seasonings.
4. Preheat the oven to 190 degrees for 35 minutes.
5. When the cake cools down, it is deconstructed and topped with white chocolate, walnuts and almonds!
