1 tablespoon baking powder
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
1 1/2 cups water

Directions:
Preheat vegetable oil to 350°F (175°C) in a deep fryer or medium-sized saucepan.
In a medium bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and cayenne pepper.
Add the water and whisk until the batter is smooth and starts to froth a little.
Using a paper towel, pat the salmon fillets dry to eliminate any remaining moisture.
Dip each fish fillet into the batter, ensuring it is fully coated.
Carefully place the battered fillets into the preheated oil, frying them in batches if necessary to avoid overcrowding. Cook for 3 to 4 minutes or until the fish turns golden brown.
Once cooked, use a slotted spoon or tongs to remove the fish from the oil and let them drain on a wire rack or paper towels to remove any excess oil.
