Ingredients:
1 lb. large shrimp, peeled and deveined
To taste, add fresh cracked black pepper and kosher salt.
1 teaspoon Cajun seasoning (or Creole seasoning)
1/2 teaspoon dried oregano
2 tablespoons olive oil
6 ounces of thinly sliced andouille or smoked sausage
10 ounces fettuccine pasta
1/2 yellow onion, thinly sliced
1 red bell pepper, thinly sliced
4 teaspoons Cajun seasoning (or Creole seasoning)
1 teaspoon brown sugar
2-3 cloves garlic, chopped
1/2 cup crushed tomatoes
1 cup sodium-free chicken broth
1 cup heavy cream
2/3 cup grated Parmesan
1 tablespoon parsley, chopped
Instructions:
Toss the shrimp with salt, pepper, Cajun seasoning, and oregano until well coated.Warm up a big skillet over medium-high heat and pour olive oil onto the pan’s bottom.
After adding the shrimp, heat it for two minutes in the skillet. Flip the shrimp over and cook for an additional minute or two. The shrimp should be taken out of the pan and placed aside.
Drizzle a little more olive oil into the pan and add the sausage. Brown the sausage until nicely caramelized, about 4-5 minutes. After removing it from the pan, set the sausage aside.
Cook the fettuccine pasta in salted boiling water until al dente according to the package instructions.
Lower the heat to medium and add a bit more olive oil to the skillet. Add the onion, red bell pepper, Cajun seasoning, brown sugar, and a pinch of salt. Sauté until the onion and pepper have softened slightly, scraping up any browned bits from the bottom of the pan. Once the garlic is aromatic, add it and cook for 30 seconds.
Stir in the crushed tomatoes, chicken broth, and heavy cream. Bring the mixture to a simmer, stirring and scraping up any brown bits from the bottom of the pan. Simmer for a couple of minutes.
Once simmering, add the grated Parmesan and stir it into the sauce. When the Parmesan is blended in, add the cooked pasta and sausage to the skillet. Mix well and let it warm up for a couple of minutes.
. Season with salt and pepper to taste. Lastly, add the shrimp to the skillet.
Serve the Cajun shrimp pasta with sausage topped with chopped parsley.
