Butter Pecan Cookies

Ingredients:

1 cup chopped pecans
7 tablespoons unsalted butter
1/3 cup granulated sugar
1 cup brown sugar
2 eggs
1 tablespoon pure vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
A pinch of salt
Pecan halves for topping each cookie

Instructions:

Set aside two baking sheets and line them with parchment paper. Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together the butter, granulated sugar, and brown sugar using an electric mixer until the mixture is light and creamy.
Add the eggs and vanilla extract to the mixture and beat for another 2 minutes until well combined.
Gradually add the flour, baking soda, and salt to the mixture and mix until everything is well combined.
Using a medium-sized cookie scoop or a spoon, drop balls of dough onto the prepared baking sheets.
Press half a pecan onto the top of each cookie.
Bake the cookies in the preheated oven for about 10 to 15 minutes or until they turn golden brown.
After baking, take the cookies out of the oven and let them to cool for a few minutes on the baking sheets before moving them to a wire rack to finish cooling.
