Ingredients:
250 g butter (at room temperature)
250 g of sugar
5 eggs
300 g of flour
1 envelope yeast powder (baking powder)
1 pinch of salt
1 teaspoon vanilla essence (optional)
Zest of a lemon or orange (optional)
Instructions:
Preheat the oven to 180°C (350°F). Grease and flour a cake mold.
Beat the butter with the sugar in a large bowl until you get a fluffy, light-colored mixture.
Beat well after each addition of egg. Add the eggs one at a time.
. If the mixture seems to be cutting off, don’t worry, it will be fixed when you add the flour.
Incorporate vanilla essence and the zest of lemon or orange if you choose to use them.
Sift the flour, yeast and salt. Add these dry ingredients to the above mixture in two or three taps, mixing with wrapping motions until well incorporated.
Pour the dough into the prepared mold, smoothing the surface with a spatula.
Bake in the preheated oven for 45-55 minutes, or until inserting a chopstick in the center comes out clean.
Let the cake cool in the mold for about 10 minutes before unmolding it on a grid to cool completely.
