Buckeye Brownie Cookies

Ingredients:

One box (19.5 ounces or family size) of fudge brownie mix
2 teaspoons vanilla extract
1 teaspoon cornstarch
1/4 cup melted butter
4 ounces cream cheese, softened
1 egg
1 cup powdered sugar
1 cup creamy peanut butter
4 ounces semi-sweet chocolate chips
Instructions:

Preparation:
Preheat the oven to 350°F.
In a medium bowl, combine the first 6 ingredients using a hand mixer. The dough will be slightly sticky.
Baking the Cookies:
Scoop the dough onto an ungreased cookie sheet and shape each into round cookies. Bake for 12 minutes.
Preparing the Peanut Butter Balls:
In a larger bowl, combine peanut butter and powdered sugar.
. Form the mixture into 1-inch balls (1 for each cookie).
Assembly:
Immediately after removing the cookies from the oven, press a peanut butter ball lightly into the center of each cookie. Let them cool for about 5 minutes, then transfer to a wire rack.
Chocolate Topping:
In a microwave-safe dish, melt chocolate for 30 seconds at a time.
Spoon about 1/2 tablespoon of melted chocolate on top of each cookie to cover the peanut butter ball. Allow the chocolate to set.
Storage:
Buckeye Brownie Cookies should be kept in an airtight container.
