Brown Sugar Amish Cookies

Ingredients:

For the Cookie:

2 cups all-purpose flour
3/4 cup brown sugar
1 cup unsalted butter, at room temperature
1/2 cup powdered sugar
1 large egg
2 teaspoons cinnamon
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt

Optional Glaze:

1 1/4 cups powdered sugar
1 teaspoon vanilla extract
1/4 cup maple syrup
1/2-1 tablespoon milk (optional)

Instructions:

Preparation:

Preheat the oven to 350ยบ F.
Mix the flour, baking soda, cinnamon, and salt in a medium-sized bowl.
Whisk together and set aside.
Making the Cookie Dough:
In a large bowl or mixer, cream together the butter and sugars until fluffy and lightened in color. Add the egg and vanilla essence and stir.
Stir in the dry ingredients gradually until well combined.. Optionally, chill the dough for 30-40 minutes.
Baking the Cookies:
Using a tablespoon or small ice cream scoop, form the dough into 1-inch balls and place them on an ungreased baking sheet, about 2 inches apart.
Bake in the preheated oven for 10-11 minutes, or until the edges are just lightly browned.
Optional Glaze:
If using the glaze, whisk together powdered sugar and vanilla extract in a large bowl. Mix in the maple syrup and whisk until smooth. Add milk if necessary.
Pour the glaze over the cooled cookies and allow it to set.
